PANCAKE AFTERNOON

When its too cold and rainy, i crave so much. I had enough time to cook this afternoon so i did pancake for my afternoon snack. I love this recipe and have it always a part of my option whenever i need to do something to tame my hunger. 


The good thing about making pancake is that its very easy and its more interesting to see the numbers of pancake your recipe can make, i gues it depends of the amount of scoop you put into the pan. So yumy.

DELICIOUS MEAT BALLS


WHAT YOU NEED
  • 500 grams of ground beef
  • 1 big grated onion
  • 1 big grated tomato ( peeled and seeds removed )
  • 1 small spoon full of chopped fresh herb (parsley or cilantro)
  • salt and pepper to taste
  • half small spoon of tomato concentrate ( tomatoe paste)
  • a little bit of olive oil like half small spoon
  • paprika and cumin ( about small spoon of paprika and 2 pinches of cumin )
  • potato slices
PROCEDURE:
  • combine the ingredients except potato, tomatoe, olive oil and tomato paste
  • marinate the mixture and make balls enough for a bite.
  • put the meat balls in the caserole and add the grated tomatoe and a little bit of water
  • bring to boil and add the tomatoe paste and potato slices. At this time you might need to add salt and pepper to make the sauce tasty. And add the olive oil, cover and let the potato cooked.

OMELETTE SAVES


It was too late to make a full dinner as we arrived late from malling tour. Our moods were at the edge of the burning firework. My stomach was giving me signal of its emptyness. I was digging up the fridge of what could be the fastest food to cook and soon as i opened it,  my eyes have hit the eggs. No time to waste tak! tak! tak!

Omelette with mushroom saves the hunger of three people. Omelette saves us and left us with a big burrrrrrppp...

NO CAKE TODAY BUT CREPE



Today i was supposed to bake a cake for tea time, but i had second thought of that since i always do cake and my taste buds seemed got so lazy like oh! no! cake again???? So i returned back the cake baking stuffs and start setting for the soft sweet craving. So after recalling  the recipe and have the measuring cups ready, then off to work.

QUICK PASTA


I went outside to fix things and i was very late for lunch...traffic...heat....crowds...i was very hungry and i needed to rush walking back to the apartment of 5 floors. All i have is pasta for a quick meal so i did pasta with a creamy white sauce...

MSMEN OR MELOUI

I love to eat this so i learned to make it by myself, it is a moroccan flat bread which before i indentified as their local pancake, funny me :) so far, i didnt have any disaster on making it because it was very easy to do.
You too can try this and when you start munching, this pancake  brings you in Morocco virtually. Msmen is a variety of Raigf that you can make even you don't have oven because it is basically one of the many kinds of Moroccan treats being cooked by frying. It is good to eat with spreads such as butter and honey, it blends well on the taste buds :) or you can put a spread you prefer like chocolate, straberry or cheese. Yummy.

Here's how to do it in case you like to try :)
  • Put 4 cups of all purpose flour in food processor, add small spoonfull of salt, add right     amount of water for making the dough turns, when you see that the dough becomes elastic and kneadable then get and put in on an oiled flat surface so that you can knead it a little more and make 8 pieces sausage like shape but you don't need a perfect shape ok, just divide it. Then oil each dough well and let  it rest with cloth cover for about 30 to 45 minutes.      
                         
          Note: While the dough turns in processor and you might notice that it becomes sticky so       you need add flour. If the dough gets hard then add water

                

  •  Melt half stick of butter and 3 tablespoon of oil. The dough has to be soft and    manageable, stretch  each of it but try not to tear it and flatten it by hand. As you work on each dough,     damp an  oil-butter mixture on it and sprinkle with semolina in  same time.
                                   
  • Roll the dough like when you roll a paper, then get the end of the dough and put it in the center      like locking it. Using just hand press the dough to make a round shape.
  •  Heat a heavy pan or skillet and cook the dough for 5 minutes on each side. Do not put oil on the                     pan as the dough is already oiled. Do not overcooked hard and crunchy and you cannot fold it when you put spread on it.



Enjoy it with tea, coffee or juice. The process seemed difficult but its not. And almost everyday i make MSMEN or MELOUI for breakfast or tea time and whenever there is some left, i put them in the freezer and reheat it for the next time.

MESSY FRIDAY

I hate the kitchen when it's friday...here in Morocco eating  couscous in particular every friday has been a habit. Friday is praying day for Allah's follower and people is having a long break from work. Lastyear, i have tasted this dish which  firstly i have graded two out of ten, i never saw this kind of tummy filler before and maybe really i never get the use to eat it, the way it is being prepared, hoooosssss!!!!!!!!!!!! it has many procedures and messy but since I'm living here in Morocco, no way but to fondle this cuisine...at the end i begun to like it but i hate to prepare it. =)

Couscous is a traditional dish staple on Moroccan table with many combination of veggies on top and meat like chicken, beef or lamb. The couscous grain is made from semolina wheat and said to be the healthiest grain goods. It is also known in Europe and South America where the recipe varries.

DATES


                                          Date fruit

In my room at Palmerai village this tree caught my attention that i could almost reach this fruit by grabbing it by hand  which before i didnt know that i have already seen this from the stores here and in the street side vendors, i was thinking it's just maybe a flower soon to be blossomed. I asked someone who happend to be the staff of the hotel about this tree that is oviously loaded with green fruit, and i was told that it is the DATES which is very important food here. People said it  gives you energy for the whole day and also it helps you to not be sick because of the nutrients in it, someone also said its a fruit  with  high carbohydrate content and rich in fiber plus vitamin and mineral. In the market this fruits appear in boxes or you can buy it per kilograms.

Personaly, i have tasted one but i didnt like it, a bit after learning the facts about this fruit, i began to eat it like twice a day or so. I buy some and i put it in the fridge so i can latch on to one anytime. Here in Morocco, this fruit is very precious like it has even its own count t for the marriage ritual. A marrying couple feed each other with this as part of the ceremony. Much so, it always a stake on that table during ramadan, its the first food most of the people chew during IFTOR time to regain back thier energy lost out of abstaining food all along the day.
